Tamale Day

Well I've had a couple of busy cooking days. Yesterday I made BBQ beef ribs... hard to find those around here...but I ran across some at a grocery store yesterday. They cut the beef here a little differently than in the States so I had to do some creative cutting but they came out pretty tasty.Then today Katie and I made homemade Mexican Tamales. I made shredded pork in a red chile sauce and shredded pork in a green salsa. We mixed the masa up ...but I couldn't find corn husks here so I tried two different methods Iread about on the internet. I used tinfoil and I also used coffee filters.They both came out very good...(which is impressive as Tamales can be tricky to make). The ones I made with the coffee filters came out a little better though--fluffier. Who would have thought it...but they breathe better than the tinfoil I suppose when the tamales are steamed. I made Chocolate and Vanilla atole to go with them. The chocolate atole I made from scratch...Imade regular hot chocolate and thickened it with maizena (a type of cornstarch) and then added some oatmeal (because I like oatmeal in mine).The vanilla atole was a pkg. one I had and it turned out good too. Anyway, I hadn't eaten all day ...but made up for it with the tamales!
