Mexican Night in Panama!


Today I made something new for dinner. I made Enchiladas del Santuario. I mixed dried chile ancho into the corn masa dough and when I made the tortilla I put what is called queso fresco...a mild, fresh, white cheese - in the middle and folded the tortilla over and crimped the edges. Then I put them on a hot griddle to cook a couple minutes and then gave them a light fry in oil. I topped them off with dry crumbly mexican cheese (nice and salty), sour cream, chopped onion and salsa (chile de arbol, garlic and tomato). They were very tasty.

Gary Jr. helped me make them. He made and filled the tortillas and put them on the griddle for me, so all I did was fry them. Quite a chef for a 10-year-old!

This was from a recipe out of one of my Mexican cookbooks. I´d never made them before as they are actually from an area of Mexico that I haven´t really visited. Mexico has so many different regional styles of cooking.

Anyway, that, homeschool and laundry pretty much made up most of my day!
