Today was full English dinner day. Gary's been wanting roast beef for ages, but the beef cuts here are so different, that finding a roast is hard sometimes. I finally found one this week though, so I slow cooked it all afternoon. It came out tender and juicy! Then I made mashed potatoes, gravy, green beans, and to top it off, individual Yorkshire puddings in the muffin tin with some of the roast drippings.
We ate it all up (well, there are six of us, and four of us are adults)! Only a few mashed potatoes and a couple slices of roast left over!
Yesterday I only ate lunch, and around 2 a.m. I got very hungry. So I got up and made myself a homemade waffle! How silly was that?! It sure was tasty though, and I discovered that cooking for one sure is faster than cooking for six! And I didn't have to wait through making everybody elses waffles before I got mine... ha! Definitely not something I'm going to make a habit of though!
I got all my laundry done today, cleaned the house up and then did school with the kids. I work with Katie and Hope once a week... except for math which is daily. Everything else I can do by the week. I assign them their work and correct the previous week's assignments every Monday. I have to work with little Gary daily for most of his subjects.
The beaches are still closed on the Caribbean side, so we won't be making any trips there this week either. A lady drowned at Playa Langosta, one of our favorite beaches. She and her friends ignored the closed beach barrier and she got swept away. The friends made it back to shore but she didn't...
So we'll definitely be waiting till things settle down out there first.
